These adorable halloween ghost cookies are sure to go down a treat at Halloween. The best thing about these cookies are they are made with honey- not white sugar, the dough does not require chilling before cutting, the cookies keep their shape when baked, they are super soft and full of vanilla flavour.Try out this recipe and serve a plate of these cuties on Halloween.
Ingredients:
60g butter, melted
140g honey, melted
1/2 tsp vanilla bean paste
170g plain flour
65g self raising flour
1/2 tsp bi-carb soda
For decorating:
400g white fondant
Sugar syrup
Black sugar beads
Black edible food marker
Ghost cookie cutter

Method:
1. Place butter, honey and vanilla into mixing bowl. Mix until combined.
2. Add remaining ingredients and beat for 1 minute until combined. Dough will be wet and sticky.
3. Carefully remove dough from bowl with a spatula and place onto a sheet of baking paper.
4. Preheat oven to 180C. Line two large baking trays with baking paper.
5. Roll dough out between 2 sheets of baking paper to 5mm thick. Using a ghost cookie cutter, cut out shapes and place onto lined tray. Repeat until all dough is used.
7. Bake biscuits for 5-6 minutes, or until golden and cooked through. Do not overcook. Transfer to a wire rack to cool.
8. Roll out white fondant until about 5mm thick. Using the ghost cookie cutter cut out shapes.
9. Brush a thin layer of sugar syrup onto each cookie and carefully place each white ghost shape onto the top. Add 2 black sugar beads for the eyes and use the black edible food marker to create a smile on each cookie.
